Dr. Park has devoted his entire professional career to surimi research and education. Since 1992, he has distinguished himself internationally as the renowned champion of surimi research, education, and technology transfer. His fish protein technology program OSU Surimi School, which he founded in Astoria in 1993 and expanded globally, trained over 6500 people from 45 different countries. His research interest is primarily rheological and chemical characterization of fish proteins and their interaction with functional ingredients and/or physicochemical components from surimi production to utilization including thermal processing.
